Who is with me? Who wants to ditch processed foods? Who wants to eat healthy!! Well today for dinner, we had breakfast for dinner and it was delish!!
My pancake recipe (this made me 4 pancakes):
1 cup of organic flour. I used unbleached white.
3 packets of raw organic stevia. 1 packet=1 tsp of sugar (you use less stevia than cane sugar)
2 1/4 teaspoons of aluminum free baking powder
1/4 tsp of Himalayan salt
2 1/2 tablespoons of butter
3/4 cup water
1 egg or 2 tablespoons of water if you have an egg allergy
1 tsp organic vanilla extract
organic cinnamon
1. Mix flour, stevia, baking powder, and salt in a mixing bowl.
2. Melt your butter in a frying pan and coat your pan with it. Dump the rest of the butter into your flour mixture.
3. Add your egg, water, and vanilla to your butter/flour mixture. Stir.
4. Add cinnamon to taste. I coated the whole top of my mixture and stirred well. If you like them extra cinnamon-y use more. If not, use less.
5. Stir again. Your batter will probably be lumpy. That is okay!
6. Fry your pancakes in the leftover butter in the pan over medium heat. Cook both sides. This step doesn't take long! Its best not to walk away.
7. Serve with grade b organic maple syrup!

Or you can check your local grocery store which is where I bought everything but the salt. :) But if your not so lucky and cannot buy organic local to you, you can find everything you need online!
